Kerala style beef roast with a lot of curry leaves and coconut bites bring out a unique flavor and aroma beyond words. Beef dishes with Kerala porotta are very popular among the street foods of Kerala. Beef roast is prepared in a different way and freshly ground spices, fried coconut bites, curry leaves, shallots enhances the flavor to make it irresistibly delicious. Try this finger licking and delicious beef roast and enjoy with your family!
INGREDIENTS:-
1 kg boneless beef, cut into chunks
FOR BEEF MASALA:
2 green cardamom
1 black cardamom
1 inch cinnamon stick
1 tbsp fennel seed
1 tsp cumin seed
2 tbsp coriander seed
5 whole red chili
2 cloves
1 star anise
1 tbsp peppercorns
OTHER INGREDIENTS:
1 cup shallots, thinly sliced
2 medium onions, thinly sliced
1/4 cup coconut bites (thenga kothu)
2 tsp chili powder
1 tbsp turmeric powder
1 tbsp crushed ginger
1 tbsp crushed garlic
2 sprigs curry leaves
salt to taste
coconut oil
FOR TEMPERING:
coconut oil
1 tbsp coconut bites (thenga kothu)
1 tsp mustard seeds
1 tsp pepper powder
5 shallots, thinly sliced
1 sprig curry leaves
METHOD:-
FOR BEEF MASALA: Heat a skillet then add all the spices and roast them on low heat till lightly aromatic. Cool and grind coarsely in a grinder or using mortar-pestle.
Cook the beef in a pressure cooker with salt, chili powder, turmeric powder and 1/4 cup water. Pressure cook till the beef is done.
Heat coconut oil in a large thick bottomed pan. Add coconut bites and curry leaves, saute till coconut bites are slightly golden. Then add crushed ginger and garlic and saute till the raw smell goes away.
Now add thinly sliced onion, shallots and little salt, saute till slightly golden. Add cooked beef along with the remaining water to the pan and cook on medium high heat till the water has almost dried up, stirring often as do not let the meat stick to the bottom of the pan. Now add freshly ground beef masala and mix well. Add more coconut oil in between if needed . Reduce the flame and dry roast the beef for 15-20 or until the beef turns brown-black and dried out completely.
Heat coconut oil in a small pan on a medium flame. Add mustard seeds, cook till they stop spluttering. Now add shallots and fry till transparent. Finally add coconut bites, pepper powder, curry leaves and pour it over the beef roast. Keep beef dry roast covered until serving time. Serve hot along with porotta, plain rice, kappa, appam etc..
