LAUKI/BOTTLE GOURD PANIYARAM |
INGREDIENTS:-
1 cup semolina/rava
3/4 yogurt
3/4 cup lauki/bottle gourd, finely grated
3/4 cup water
1/4 tsp baking soda
salt to taste
To temper:
1/4 cup onion, finely chopped
1/2 tsp mustard seeds
1 tsp ginger, finely grated
1/4 tsp urad dal
1/4 chana dal
1 green chili, finely chopped
1 tbsp curry leaves, finely chopped
a pinch of hing
METHOD:-
- Take a large bowl and combine rava, yogurt, lauki, water, baking soda and salt. Mix well to form a thick batter without lumps.
- Heat oil in a pan, add mustard seeds and let it splutter. Now add urad dal and chana dal, fry until golden brown. Then add ginger, green chili, onion, hing and curry leaves. Saute till transparent and add this to the rava batter.
- Heat paniyaram pan and add few drops of oil. Now fill the holes with a tbsp of rava batter in each, cover and simmer until appam gets cooked slightly. Once the base turns golden, flip it and cook until it turns golden brown. Serve hot!
